Cheeses
The dairy tradition of the rural areas of Tenerife is very much appreciated by the islanders who love local cheeses, so much so that they are among the first in Spain for per capita consumption (about 14/16 kg per year). The greatest consumption concerns fresh white cheeses, but the consumption of curados and semi-curados, cheeses that are often hand-crafted and even slightly seasoned, are not disdained.
Dairy products are very present in the Canarian cuisine and in its more or less elaborate recipes.
