CHICKEN WITH TOMATO
Simple but tasty, it is a recipe that can be used at any time of the year. Chicken meat is a staple food in the Canary kitchens and is also rich and cheap, it is very versatile and with it we can prepare more different recipes.
Let’s follow the recipe together …
1 large onion
2 green peppers
1 large pack of minced tomato
1 chicken nut
ground black pepper, salt, extra virgin olive oil
The recipe can also be done with favorite chicken parts, only breasts, wings or thighs only.
After washing the chicken, peel the onion by cutting not too large chunks, same thing we do with the peppers after cleaning the inside. Heat a large pot with plenty of olive oil and let the chicken pieces brown, without cooking them internally but turning them often to fry them from all sides, then put them in a separate dish to use them later; in another saucepan fry the onion into chunks until golden brown, add the peppers cut and salt and pepper, let cook until a good point then add the chopped tomato, the chicken nut and stir over low heat for about a Now. At this point add the chicken letting it cook in this thick and well-concentrated sauce, making sure that the chicken is cooking well inside; you can eat hot or serve after having it rested for at least an hour. Very tasty.
