75 gr of extra virgin olive oil

75 gr. of wheat flour

500 ml. of partially skimmed milk

1 medium chopped onion

200 gr. boiled / cooked chicken and finely chopped

100 gr. of raw ham cut into very small cubes

ground black pepper and salt

Chop the onion, put the oil in a pan already hot to fry the onion and salt until browned, with a strainer slowly add the flour and continue to mix to avoid clumping; add the chicken and ham, continue cooking over a low heat, add the hot milk and continue stirring until it becomes a uniform mixture. Sprinkle with salt and pepper and do not let the mixture lose consistency. Store in a container covering very well with a transparent film so that it does not take air and put it in the refrigerator to harden. We resume our now firmed mixture and find the way most congenial and practical to create the “croquettes” of the preferred shape, also in the form of sausages of 7/8 cm. how do you use it in Canaria. Pass them in the beaten egg and then in the breadcrumbs, then fry them in boiling oil and eat them hot. The chicken and ham can be replaced at will with many other ingredients including fish (pescado)!
